David Bouley's "Evolution" Comes to The Ritz-Carlton, South Beach

Renowned Chef to Open First Restaurant Outside of New York City in 2006 David Bouley, internationally acclaimed Chef/Owner of Bouley, Danube and Bouley Bakery & Market in New York, brings his unabashed culinary talent to The Ritz-Carlton, South Beach in 2006 with his newest restaurant david bouley Evolution—his first outside of Manhattan. Designed by the world famous architect, Jacques Garcia (designed Spice Market & Danube in NYC, as well as Hôtel Costes in Paris); the sophisticated restaurant will bring to Miami Beach an unparalleled level of cuisine and service. The dramatic Art-Deco space will feature a lounge, sushi bar, dining room, and two private rooms.

The inventive menu will couple Chef Bouley's successful four-star restaurant career with his extensive world travels and education including influences from Spain, France, Asia and the chef's New England upbringing. The seasonal fare will feature the highest quality products, including local produce, as well as unique ingredients from around the world.

"I've traveled and studied across the globe and am enthusiastic about bringing my knowledge and experience to light in Miami," Chef Bouley says. "Evolution will be a celebration of what I've experienced and learned throughout my career and travels."

In 1987, David Bouley opened his first restaurant, the critically-acclaimed Bouley in New York's Tribeca, setting a standard for fine dining in the United States. From 1991 through 1996, Bouley restaurant was rated number one in the Zagat survey, and also earned four stars in the New York Times review. To this day, Bouley is the only restaurant to achieve a 29 food rating in Zagat for three consecutive years. Trained in top restaurants in France and New York, David Bouley has developed a reputation as one of the world's top chefs.

The Ritz-Carlton, South Beach opened December 31, 2003 as Miami's newest oceanfront hotel and is a complete restoration of an original 1953 Morris Lapidus-designed landmark in the city's historic Art Deco district.
